Paleo Waffles

Waffles are a Sunday morning tradition at our house. If not waffles, it’s banana pancakes. So, when we started our Crossfit & Paleo adventures last June, giving up our weekend waffles seemed like a giant sacrifice.

Thankfully, we didn’t have to. These Paleo waffles satisfy that need for a good, indulgent weekend breakfast and still keep you in check:


1/4 C Coconut Flour

4 Eggs

1 Tbs Almond Milk (can also use Coconut Milk here)

1 Tbs Cinnamon

1/4 tsp Nutmeg

1/4 tsp Baking Soda

1/2 tsp extract of your choice. I use Almond Extract, but vanilla works too!

Combine dry ingredients in a large bowl, making a well in the center. In a separate bowl, whisk eggs, milk and extract; Add to dry ingredients, whisking away any lumps. Spread onto waffle iron (batter is not as spreadable as typical waffle batter). Cook and enjoy! Top with fruit and/or pure maple syrup.
